Looking for a delicious bite to eat that is simple to make and actually requires no cooking? Then ceviche is the dish for you!  I have grown particularly fond of Peruvian style ceviche.  This may have something to do with the fact that one of my favorite people in the world just so happens to be from Peru and is also a fabulous cook.

Now to make the perfect ceviche, it’s ideal to have a couple special ingredients.  In particular a yellow pepper paste, and peruvian garlic.  However if you don’t have a specialty store near you, I found sriracha and some thai chili peppers made do as I have used in this recipe today.

You will want to let this sit for a minimum of 20 minutes after the dish is complete but the longer you let it sit the better it tastes!  While I love dish all by itself, if you are looking for a more complete meal, serve it over lettuce and sliced boiled potatoes.
